Martin VolkaertsGraduated in 2009 from the Ecole Hôtelière of Namur, the least we can say is that Martin Volkaerts has not wasted any time since… His CV is a testimony, filled with famous addresses : many collaborations with Sang-Hoon Degeimbre at l’Air du Temps, his apprenticeship at such restaurants as Nuance in Duffel, Cuisinémoi in Namur, Pastorale in Rumst, le Château de Namur and, last but not least, one of the best restaurants in the world : Noma in Copenhagen ! Since September 2012, Martin has joined the family kitchen at « l’Amandier » in Genval. The restaurant, where you can observe Martin and his father work live from the open kitchen, was graded 16/20 by Gault & Millau in 2013.
